Rosemary Marinated Lamb Chops

Rosemary Marinated Lamb Chops

Serve with a side of rosemary & olive oil quinoa and sautéed zucchini with onions. Tip: Fresh herbs really make this dish flavorful. If you’re serving more than 3 people, we suggest doubling the recipe.

Ingredients

6 lamb chops

rosemary marinated lamb chops1 small onion, chopped

4 garlic cloves, minced

1/4 cup California Extra Virgin Olive Oil

1/4 cup white cooking wine

1 tbsp. lemon juice

1 tbsp. orange juice

1 1/2 tsp. rosemary

1 tsp. thyme

1 tsp. salt

1/2 tsp. pepper

Directions

Clean, trim, and place lamb chops in a self-sealing plastic bag. Prepare the marinade by combining all the remaining ingredients in a small bowl. Pour 1/2 the marinade in the plastic bag with the lamb, making sure all pieces are coated with the liquid. Put in refrigerator and let marinate for 1 hour.

Preheat oven to 400 degrees. Remove the lamb chops from the refrigerator and place the meat in a shallow baking dish. Discard any remaining marinade and plastic bag. Pour the reserved marinade you set aside over the lamb chops, spooning onions, garlic, and herbs over the top. Bake for 25 minutes or done to your liking.
