This Roasted Red Potato recipe is a versatile side dish that can accompany a grilled filet of beef or be served alongside a vegetable omelet for breakfast. 6 red potatoes, cut into bite size pieces
1/2 small onion, chopped
2 tbsp extra virgin olive oil
sea salt and fresh ground pepper to taste
Preheat oven to 375°. Place all ingredients in 8″ round casserole dish and mix together, making sure the olive oil fully coats the potatoes and onions. Cover with foil and bake for 20 minutes. After 20 minutes, stir the potatoes so they don’t stick, cover with foil again and bake for another 20 minutes. After 20 minutes, remove the foil, stir the potatoes again and let brown for another 5 minutes, or until potatoes are soft.
