Another favorite! We love this Italian Style Turkey Meatballs recipe in the Fall when there is a slight chill in the air and we want something to warm us up. Whip up some Olive Oil Mashed Potatoes (see our recipe under Vegetables & Sides) and serve the meatballs over the potatoes with the leftover gravy drizzled over the top! Yummy! Recipe makes 16 – 18 meatballs.
1 1/2 lbs ground turkey
1/2 cup onion, chopped
1 tbsp Italian flat leaf parsley, chopped fine
1/2 cup Italian seasoned bread crumbs
1/4 cup grated parmesan cheese
1/4 cup extra virgin olive oil
1 3/4 cups chicken broth
1/2 tsp each Salt and pepper
In a medium sized bowl, add onion, egg, parsley, bread crumbs, parmesan cheese, salt and pepper and mix well. Add in the ground turkey and mix with hands until all ingredients are combined. Roll the meat mixture into 2 inch balls.
Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned (about 8 minutes). Add about 1/4 cup of the chicken broth and cook a few minutes more until the liquid is absorbed. Continue turning the meatballs so all sides are cooked evenly. Add the remaining chicken broth and cover. Reduce the heat to simmer meatballs in the broth until the meatballs are cooked through, about 20 minutes.
