Keep “cool as a cucumber” on a hot summer day with this refreshing cucumber salad made with tangy lemon, feta cheese, and a hint of dill. The recipe is so simple and focuses on enhancing the flavor of the cucumber. Since the ingredient list is minimal, use a high quality extra virgin olive oil. Recipe serves 2-3 depending on size of cucumber.
1 English cucumber, sliced thin
2 tbsp extra virgin olive oil (We use California Olive Ranch Everyday)
1 tbsp fresh lemon juice
2 oz crumbled feta cheese
1/2 tsp dill
freshly ground sea salt and pepper
Place cucumber slices in a straight line, slightly overlapping each piece, on a rectangular shaped serving dish. Sprinkle the feta cheese evenly across the top of cucumbers.
In a small bowl, whisk together the olive oil, lemon juice, and the dill. Slowly pour across the top of cucumbers and cheese. Season with freshly ground sea salt and pepper to taste.
