Fresh romaine lettuce, sugar plum grape tomatoes, avocado slices, and crisp bacon make up this salad version of our favorite BLT sandwich. Don’t worry, this salad is so savory, you won’t miss the bread! This recipe serves enough for 2 large salads or makes 4 side salads.
1 bunch romaine lettuce, cut into bite size pieces
1 avocado, diced
1/2 cup grape tomatoes, cut in halve
6 pieces hickory smoked bacon, cooked crisp
fresh cracked black pepper
1/4 cup extra virgin California olive oil
1 tbsp. balsamic vinegar
1/4 tsp. dijon mustard
1/8 tsp. sea salt
Cook bacon until crisp. Drain fat and set aside to cool down. Mix all ingredients for the vinaigrette and set aside so the flavors meld. Prepare all produce (wash, cut, and dice) and place in large bowl. Once bacon is cool enough, crumble with your hands and sprinkle it over the salad. Pour the vinaigrette over the top and grind a little black pepper to finish. Ready to serve!
