This basil pesto recipe comes from the cookbook “From the Olive Grove – Mediterranean Cooking with Olive Oil” by Helen Koutalianos and Anastasia Koutalianos*. Everyone needs a basic recipe for pesto! A little basil pesto can add so much flavor to almost anything. Add to pastas, spread over chicken before grilling or baking, bake on a baguette for a tastier version of garlic bread, use as a condiment to spread on your sandwiches, or use as a base for a homemade pizza! Recipe makes about 1 cup.
1 1/2 cups fresh basil
4 garlic cloves
1/2 cup pine nuts
3 tbsp grated parmesan cheese
1 tsp lemon juice
1/2 cup olive oil
sea salt, to taste
In a food processor on medium speed, blend the basil, garlic, pine nuts, cheese, and lemon juice. Reduce the speed to low and slowly drizzle in the olive oil until the mixture emulsifies. Add salt to taste.
